Bernice’s Grasshopper Parfaits

Makes 8 servings, 1/2 cup (125 ml) each
Prep Time: 20 minutes
Total Time: 50 minutes
Nutritional Profile: Low saturated fat, Low cholesterol, Low sodium
Ingredients:
1 - 4 serving package Jell-O® Chocolate Instant Pudding
2 cups cold milk
4 drops green food colouring
1 cup thawed Cool Whip® Whipped Topping
7 Oreo® Cookies, finely chopped (about 3/4 cup)
4 chocolate-covered mint patties, finely chopped (about 1/4 cup)
Directions:
1. Beat the pudding mix & milk together with a whisk for 2 minutes. Let the mixture stand for 5 minutes.
2. Meanwhile, stir the food colouring into the Cool Whip until blended.
3. Combine the chopped cookies & mint patties.
4. Spoon 2 tablespoons of the pudding into each of 8 dessert glasses. Top each of the puddings with 1 tablespoon each of the Cool Whip & the crumb mixture. Repeat all of the layers, then refrigerate for 30 minutes.
