GUARDIAN'S APPLE STREUSEL CAKE
1 1/3 cups all purpose flour
1 cup whole wheat flour
1 1/4 cups sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup oil
1/4 cup honey
1 teaspoon vanilla
2 eggs
5 cups apples, coarsely diced
1/2 cup chopped nuts, optional
Streusel:
2 tablespoons flour
2 tablespoons butter, softened
5 tablespoons sugar
1 teaspoon cinnamon
Pre-heat
the oven to 350 degrees. Grease and flour a 13 x 9 inch pan. In a large bowl, combine
all the ingredients except nuts, apples and the streusel ingredients and mix, at
low speed using an electric mixer, until moistened; beat 2 minutes at medium speed.
Stir in the nuts and apples by hand. Spread the batter in the prepared pan. In a
small bowl mix the streusel ingredients to form a crumb mixture and top the batter
with it. Bake at 350 degrees for 40 to 50 minutes or until toothpick inserted in
center comes out clean. Serve warm or cool with whipped cream or ice cream. Enjoy.
