White Sauce Mexican Casserole

Ingredients

1 lb. ground beef 80/20

1/2 C onion, finely chopped

1 pack hot taco seasoning mix

2 C shredded cheddar cheese

1 can refried beans

1 C prepared Mexican rice

1 can fire roasted corn, drained

4-5 large flour tortillas, cut in half

8 oz of thick chunky pico de gallo

½ cup sour cream as garnish

2-3 fresh jalapenos as garnish

Cilantro as garnish



Instructions

Spray your casserole dish with cooking spray. In a large saute pan brown ground beef ,taco seasonings, and onion. Drain the beef and set to the side. Lay the 2 half tortillas in the bottom of the baking dish. Add 1/3 of the beans on top of the tortillas and spread evenly. Now add 1/3 of the meat and add some cheese, spread evenly. Add the second halves of the tortilla, then some of the rice, half of salsa, and some of the corn and cheese. Add the third layer of half tortillas, some of the beans , meat, and cheese. Add the fourth half layer tortillas, then some beans, meat, corn, rice, salsa and cheese. Cover with foil. Bake for 350 for about 40 minutes. Set to the side for 5 to 10 minutes. Garnish as desired.
