Zoe‘s maple coconut oatmeal

Zoe‘s maple coconut oatmeal

Ingredients

1 1/2 cups almond milk

2 1/2 cups water

1 cup steel cut oats

1/4cup fine shredded unsweetened coconut

A few pinches of cinnamon

Half a cup of maple syrup



Directions

Add one and a half cups almond milk and 2 1/2 cups water to sauce pan. Add half a cup of maple syrup and place on heat. Bring to a boil on medium heat. Add oats and bring again to a boil. Take down the heat to simmer and simmer for 20 minutes stir every so often so oatmeal doesn’t stick to pot. At the 20 minute mark add coconut a quarter cup and desired amount of cinnamon. Boil for another 10 minutes.

If you have the time and energy before adding oats to the almond milk mixture, heat a frying pan and add oats and sauté them until fragrant. This brings out their taste even more.

Serve with sliced bananas if desired.
